Weeknights are crazy for our busy family. Between dance, gymnastics, golf and recording workout videos for my clients I barely have time to cook or sit down with the whole fam. That's why I look for one pot meals, or meals that are on the stove to table in 30 min.
Even if you're in a hurry you can fill tummies with yummy food, have enough time for bath and a still have time to binge watch some Hallmark movies while folding laundry.
Before creating my menu my 3 question to myself are-
Will it fit in my macros?
Will the family approve?
Is it an easy recipe I can make fast?
Once those are covered I look in my pantry and fridge and can build from there.
I try to cook a meal at least 3x a week then we have meals for the other 4 days, or they can work for lunches for me and the hubs.
Occasionally when the hubs is home during dinner time we will attack a complicated recipe but for the most part easy is the way to go.
Today's easy family recipe is my Taco Chili!
It's hard to resist a taco theme on this day. I know you will agree!
Every Tuesday I'm craving some tortilla chips and salsa.
Easy Taco Chili
2 package of 1 lb Lean Ground Beef
3 Cans of Diced tomato garlic/onion flavor(undrained)
1 Small can of tomato sauce
1 can organic light red Chili beans(undrained)
1 can Organic Black beans
1 Tsp of minced garlic
2 TBSP butter
1/2 Bag of Frozen onion and peppers(you can even grab the fresh, I just always have frozen veggies on hand)
1 Packet of Taco Seasoning
1 Packet of GOYA Sazon Seasoning
1 Tablespoon of Ranch Seasoning(or 1/2 packet)
Toppings-
Cilantro Bunch chopped
Light Sour Cream(or greek yogurt)
Mexican grated Cheese
Tortilla Chips
Avocado sliced
-In a large skillet Brown ground beef until no longer pink 8-10 min, drain. While that is draining,
Add 1 tbsp of butter to skillet and garlic and cook till golden brown, add then add another tbsp of butter and cook frozen onions and peppers mix.
Add all remaining ingredients and cook in crockpot on low for 3-4 hours
**In a super hurry? Cook over stove in large soup pot for about 20 min.
or until done on med/low heat.
Double the recipe for leftovers! This feeds all 5 of us and we have some left for leftovers.
Top with Cilantro, low fat Sour cream or Plain Greek yogurt(taste just like sour cream), avocado slices, grated Mexican cheese as toppings and Tortilla chips on top. Enjoy!
