Shrimp and fried Quinoa!
This recipe is super easy for a quick dinner or lunch.
One bag Cooked Shrimp(Thaw as directed, usually 5minutes running under cold water)
1 Bag of Quinoa(bowl in bag) Cook as directed(10min)
1 Bag of Frozen Stir fry(Cook as directed)
5 Garlic Cloves
1/4 Frozen bag of Green/Red Pepper, Onion,
2 Eggs
Salt and Pepper
Teriyaki Sauce
Soy Sauce
3 Tbsp real butter
EVOO
I cook everything as directed and then I use a little EVOO to coat a pan to saute' the garlic and frozen green/red pepper and onion mixture, then after that is sauteed' add the Shrimp and veggies about 3-5 minutes, adding a little teriyaki sauce and soy sauce(about 2 tsp each)while that is cooking,
Add 1 Tbsp of butter to another pan and scramble two eggs with salt and pepper, then push eggs to side in the pan, and add remaining butter, quinoa should be ready by then and just drain in sink and then transfer to pan with eggs and fry up.
Add Fried Quinoa to bowl, then add Shrimp and veggies on top, add more soy sauce to liking.
